What is the best 10 inch chef's knife I can by for less then $200?

I have been looking at the the Shun, but want to get some more peoples opinion.

I use J.A. Hinkels, but I also hear Global make a good product.

Good question. I've been trying the market for years now, having the Global knives and even the ceramic Kyocera knives.

For several reasons, I was left dissatisfied by Global, especially due to the relatively quick dulling of the edge--I suspect this is due to the hardness of the steel. I had to have them professionally sharpened about every 5-6 months, and that's with honing them before ever major use myself. That's not really acceptable.

As you point out, the Shun knives are amazing. I picked up a 6" knife about a year ago, to try out the line before investing in anything bigger. These days I wouldn't want anything BUT Shun, they're simply great, stay (very!) sharp, and the teardrop shape on the wooden handle is very comfortable, even after long periods of using them. It's perfectly balanced (well, so is the Global), and the folded steel on the blade makes it look great too.
